Noble Rot Wine

Noble rot wine is a wine made from noble rot grapes, which have a high sugar content due to the adhesion of a type of mold called noble rot to ripe grapes, which creates tiny holes in the skin and allows the juice to evaporate. Naturally, the yield is smaller than that of regular wine, making it a very valuable, high-end sweet wine. Mavi's noble rot wine is made organically, so there are some years when the grapes cannot be harvested. The noble rot grapes are carefully selected and harvested, carefully observing the condition of each grape, and then carefully aged to finish. It really all depends on the skill of the producer. At Mavi, you can enjoy organic noble rot wine made by the Fourcaud family in Sauternes, a famous producer of high-end noble rot wine.

At the Fourcaut family estate, the Garonne River, which flows through the forest near the Château, meets the cool Ciron River, creating fog due to the temperature difference. The noble rot fungus that creates Sauternes can only develop properly under special conditions, with fog in the morning and clear skies in the afternoon. Semillon grapes ripen in early September, but it is up to nature to decide when the noble rot fungus will appear. The grapes are harvested from those that have the fungus, so they are harvested at least two or three times, and sometimes more than ten times.

The harvested grapes are pressed immediately and stored at 4℃ or below. Once the juice has settled, the supernatant liquid is fermented in a cement tank. It is then aged alternately in Bordeaux oak barrels for one year and then in a cement tank for one year, and finally bottled three years after the harvest.
