Cava is a sparkling wine from the Catalonia region of Spain. It has a scent reminiscent of citrus fruits, herbs, and honey. It is a dry sparkling wine with a refreshing, concentrated fruitiness and minerality that spreads in the mouth, powerful bubbles, and a bitter aftertaste that is very pleasant. It is highly cost-effective and is useful for everyday use or as the first bottle at a home party with a large group of people.

味わい

輝くホワイトゴールド。

グレープフルーツなど柑橘系果実の香りに、ハーブ、火打石、白胡椒、やや蜂蜜の香り。

細かく柔らかな泡に熟した果実味、ミネラルが広がる。ほろ苦い後味が心地よい軽やかな飲み口のカヴァ。

オーガニック歴：創業以来（認証取得は2003年）

スペイン カタルーニャ州ペネデス西北端のエル プラ デ マンルーの山間部にあります。標高は500~600mで平地との気温差が4℃ほどあり、寒暖差が大きいのが特徴です。家族4人で経営しており、祖父の代より殺虫剤や化学肥料を使用しない農法を実践していました。父の代の1997年にオーガニックへ転換し、2003年に認証を取得。自然に配慮すると同時に、人体の健康を考えた選択でした。同時に自然な農法や醸造法でぶどうやワインの品質を高めていくことで、本物の特性を表現できると考えています。現在は兄妹が中心となって栽培と醸造を行っています。カヴァの法定最低熟成期間は9ヶ月ですが、状態を見ながら20~36ヵ月間熟成させます。長く熟成させればさせるほど細やかな泡になります。「流行にとらわれることなく、良いと思ったものを変わらず造り続ける。大手とは違う自然が表れたカヴァを造ることに喜びを感じている」と父のジュリアンは言っています。

グラスの中の柔らかな泡にまったりしつつ、一口飲んでみたらビックリ！意外にもドライな苦味に目が覚めました！
ジメジメした天候や気分を吹き飛ばしてくれる、梅雨にピッタリなカラッとした泡だと思います。
たまたま用意していたウドとクルミのサラダが、心地よ?い苦味によく合いました。

ボトルの見た目もさることながら香りと飲み口はさくっと、でも後味は優しく雑でなく繊細です。
