味わい

ごく淡いレモンイエロー。

やや熟したグレープフルーツに白いスパイスや花のような香りが華やか。その中にミネラルもしっかりと感じる香り。

口当たりはとてもフルーティ。フレッシュな酸味とバランスの良い果実味が広がる爽やかな味わい。後味はほんのりとした苦味がひきしめる。

かなり幅広くいろいろなお料理を美味しくしてくれそうな、コストパフォーマンス抜群の白。

オーガニック歴：1980年から

首都ウィーンからさほど遠くない静かで美しい自然が広がる場所にあります。息子マーチンを中心に栽培から醸造までを行っています。父のハンスはオーガニックに理解などない時代(1980年)から実践しており、「もし、オーガニック栽培ができないという人がいるなら、たとえ一部でもチャレンジしてみるべきです。誰でも除草剤は必要ないと知っています。ただそれが便利だからというだけなら私には必要ありません」と、言います。心がけているのは、酵母、酵素、栄養分といったものは一切加えず、可能な限りピュアなワインを造ること。ディヴァルト家で手を加えるといえば、温度調節くらいです。その土地特有の、地球に根ざしたワイン造りを目指しています。

白はあまり飲まないのですが、これはとても飲みやすい。色々なハムといただきましたが、何にでも合うと思います。いつも置いておきたい一本ですね。
