味わい

やや淡いレモンイエロー。

香りの種類が非常に多く、華やか。

パイナップルに桃のコンポート、ハーブや、白いスパイスに、白墨や鉱物的なミネラル感もしっかりと感じる。そしてそれら全体をまるでパイやタルトのような甘やかで香ばしい香りがまとめあげる幸福な香り。様々な香りが複雑に絡み合いとても楽しめる。

口当たりはまろやか。非常に凝縮された果実味と、それに負けない酸味が力強く、満足感ある飲みごたえ。

余韻は非常に長く、後味に残る幸福な香りの印象がそのまま、最後まで楽しめる。

首都ウィーンから車で1時間ほど離れた、ドナウ河の北岸傾斜にぶどう畑があります。マントラー家がワイナリー経営をはじめたのは200年前です。かつての修道院の敷地で農業とワイン造りを行っています。父のヨセフは2002年の大洪水をきっかけにオーガニックに転換しました。「同じことをこのまま続けていたら、モノカルチャーと土壌劣化の結果、工業的農業は終焉へ向かうだろう」と考えたのです。ぶどう栽培においては、とにかく観察。何を必要としているか、どのような環境にさらされているのかをしっかりと見抜き、腐植質豊富な土壌にすることで、自然と土壌が豊かになることを目指しています。醸造では、その年の特徴が自由に表現されることを願いつつ、人的介入が最低限になるように心がけています。現在は父の教えを守りつつ、三兄弟が中心となって運営しています。
