Taste

The rich, sweet aroma is reminiscent of red fruit jam, and is nicely accented by the vegetable and spicy aromas typical of Cabernet. The strong tannins are covered by the rich fruitiness, making this a full-bodied wine.

The AOC Saint-Nicolas-de-Bourgueil produces red wines and a small amount of rosé wines. This is where the Breton (Cabernet Franc) grape variety really shines, producing a pleasant bouquet that is lively yet powerful, giving the wines a full-bodied flavour. They go well with baby rabbit, poultry and roasted meats.

Sable means sand, and was named after the fact that it is made from fruit grown in sandy fields. Sandy soil is perfect for grape vines that prefer dry land. This is because it has good drainage, so there is no wasteful water accumulating at the roots, and it accumulates heat during the day and releases it at night, which promotes the ripening of the fruit.

On the other hand, the Gravier wines, made by the same producer, are grown on gravelly soil. Compared to the Sables, they have a more complex and powerful impression. Please enjoy comparing the two wines.

Organic history: Since 1998

Our vineyard is located in the Loire region, which spreads around the Loire River and has a rich and varied landscape. We took over the vineyard from our parents in 1996. Starting with 3 hectares, we gradually expanded it to 12 hectares today. Due to the damage that humans have caused to Mother Earth, we as farmers, artisans and wine growers felt strongly that we had to protect the land, so we started practicing organic farming in 1998. We have also been using biodynamic farming since 2006. The entire domaine practices the philosophy of "being with nature" with solar panels, rainwater collection and farming by animals.
