This dry sherry-type wine is made in the village of Villaviciosa, about a two-hour drive from the city of Cordoba in Andalusia, southern Spain. Because the moisture is removed during the five-year barrel aging period, the wine has a high alcohol content of over 15% even without added alcohol. As the name Palido (pale) suggests, it is characterized by its straw-like golden color and sharp, clean, dry taste. It goes well chilled as an aperitif, or with light meals.

味わい

透明感と輝きのある、藁のような黄金色。

グラスに注ぐと、離れていても感じるほどの強い芳香があります。熟したリンゴやスモモのニュアンスに、カモミールやジャスミンティにフレッシュなハーブ。さらに熟成による、藁やヒノキ、ヘーゼルナッツ、発酵中のパン生地など、バリエーション豊かな香りが繊細に感じられます。

口に含むとドライで、酸やほんのりと酵母由来のビター感があります。香りでも感じた熟したリンゴや、リンゴの皮、藁のようなスパイス感、ナッツやパン生地のような酵母の香りがしっかりと感じられます。余韻も長く、繊細に風味が引き延ばされていく印象です。

味わいの豊富さや、各々のアロマの協調性が感じられつつも、繊細な口当たりで、思わず無意識に「美味しい」と呟いてしまいそう。

酒精強化をせず、ここまでデリケートで表現力の高いワインに仕上げるのはネヴァド家の伝統と実力の賜物です。

オリーブや牧畜が盛んなスペイン南部 アンダルシア州のコルドバにあります。気候は典型的な地中海性気候で、降雨量が少なく乾燥しています。1754年からワイン造りをしており、1988年にアンダルシア州で最初にオーガニック認証を取得しました。ネヴァド家のドラドセコはシェリータイプの極辛口ワインです。アルコール添加を一切しないこのワインは日本では大変珍しいワインで、夏場はロックや炭酸水でお楽しみいただくのがお勧めです。
平均樹齢50～100年のオリーブから収穫される、うまみが凝縮したオーガニックエキストラバージンオリーブオイルもつくっています。低速遠心分離法で丁寧にゆっくりと抽出するので、酸化しにくいのが特徴です。様々なお料理にお試しください。
