About the Vives family
Mas de la Basserola (the Vives family)
Organic history: Since founding (certified in 2003)
It is located in the mountain area of El Plat de Manlu, in the northwestern tip of Penedès, Catalonia, Spain. The altitude is 500-600m, and the temperature difference from the plains is about 4℃, so it is characterized by a large temperature difference. The family of four runs the farm, and since my grandfather's generation, they have practiced farming methods that do not use pesticides or chemical fertilizers. In 1997, my father's generation converted to organic farming, and obtained certification in 2003. It was a choice that considered nature and human health at the same time. At the same time, we believe that by improving the quality of grapes and wine using natural farming and brewing methods, we can express the true characteristics. Currently, my brother and sister are mainly in charge of cultivation and brewing. The legal minimum aging period for Cava is 9 months, but we age it for 20-36 months depending on the condition. The longer it is aged, the finer the bubbles will be. "We continue to make what we think is good without being caught up in trends. We feel joy in making Cava that shows nature differently from the major companies," says my father, Julien.
