Two new sherry-type wines now available!

Palido means "light" in Spanish and is a clean, dry type of wine .

After fermenting in stainless steel tanks, the wine is transferred to amphorae with yeast and aged for two years, after which it is transferred to wooden barrels and aged for more than five years in the Solera system.

During the aging period in the solera system, the water evaporates through the bark, increasing the alcohol content and naturally stopping fermentation, so the wine is not fortified.

A brilliant golden color. The rich flavors of ripe apples, plums, and chamomile are combined with cypress and hazelnuts from aging, and fermenting bread. It is dry in the mouth, with acidity and a slight bitterness from yeast. It is the result of the Nevado family's tradition and ability to produce such a delicate and expressive wine without fortifying it with alcohol.

It is usually drunk straight as an aperitif, but in its producing region it is sometimes diluted with carbonated water in the summer.

As a drink to have with meals, its clean, dry taste goes well with soy sauce, vinegar, bonito flakes, ginger, and myoga, making it suitable for use with all types of Japanese cuisine.

Abocado is an old name for a sweet sherry-style wine .

The harvest is delayed, and the grapes are left to turn raisin-like on the vine before being hand-picked. The grapes, which have an extremely high sugar content, are pressed and fermented at low temperatures in stainless steel tanks. Before fermentation is complete, the grapes are transferred to wooden barrels with the sugar still remaining, and fermentation continues for over five years.

During the aging period in the solera system, the water evaporates through the bark, increasing the alcohol content and naturally stopping fermentation, so this wine is not fortified either.

The transparent amber color is impressive. The aroma of fig jam, raisins, plums, and other notes is accompanied by deep nuances of leather and licorice, creating a fascinating aroma. The taste is sweet and mellow. In addition to raisins and plums, you can also taste the flavors of cacao, brown sugar, and black tea.

Recommended as an aperitif, digestif, or coffee time, served straight. It has a long aftertaste, making it a luxurious drink to savour slowly.

Introducing the Producer - The Nevado Family

Nevado family

The Nevado family is located in the mountains of Cordoba, Andalusia, in southern Spain. The land has little rainfall throughout the year and is dry, making it an attractive place for grape growing, and they do everything from growing to brewing their own wines.

Since its founding in 1754, the farm has never used chemical fertilizers or pesticides, and in 1978 it became the first farm in Andalusia to receive organic certification.

The vineyards are located on well-ventilated hills, and some of the vines are 90 years old. The grapes are all hand-picked, with only 3kg being harvested from each vine.

Apart from the addition of alcohol, this wine is made in the same way as sherry, using ancient methods handed down from generation to generation.The wine is made by the family themselves, with no cutting corners and keeping production to a limited amount.

About the "Olive Oil" made by the Nevado family

The Nevado family, the first family in Andalusia, Spain to receive organic certification, also grow olives, taking advantage of the dry, warm climate.

Olives grown in high mountains are smaller than those grown on the ground, giving them a concentrated, rich flavor. Extra virgin olive oil is made by slowly and carefully squeezing these olives using a centrifuge method. It has a refreshing aroma and a rich, full-bodied flavor that is so delicious that once you try it, you'll want to drink it again and again.
