A high-class, extra sweet wine produced in the Sauternes region in the south of Bordeaux. Made from grapes infected with noble rot from Semillon, Sauvignon Blanc and Muscadelle, it has an elegant aroma of butter, dried fruit and honey. It is an organic wine that can be enjoyed slowly with blue cheese. It comes in a half-size bottle so you can try it casually.

味わい

貴腐菌が自然にぶどうの房を覆うのをしっかりと待って、ぎゅっと糖分が凝縮したぶどうだけで造られました。最良の状態の果実を得るため、房の中でもしっかり貴腐菌がついた粒のみを選り分けて収穫することもあるほど、手間をかけられています。

黄金に輝く液体から、バターや、ドライフルーツ、蜂蜜、花などの香りが優雅に広がり、香りと味わいのバランスもすばらしく、その後にはうっとりするような、非常に長い余韻が続きます…。

まさに、贅沢な時間のためにあるワインです。

（生産者さんによると、ソーテルヌは場合によっては開けてから数日経ってから飲んだほうが美味しいこともあるし、開けた後バキュバンなどのワイン保存器具を使って冷蔵庫に入れれば、15～30日（*）はもつそうです。

このワインは成分が凝縮していますので、澱が出やすくなっています。

オーガニック歴：1994年から

ボルドー地方の世界三大貴腐ワイン産地のひとつソーテルヌ地区にあります。ソーテルヌ地区に流れるシロン川は3000年以上前からある森に覆われているために水温が低く、水温が高い河川と合流する地点では夕方から明け方にかけて霧が発生します。この霧によりぶどうの表面に貴腐菌がつき、日中の陽射しでぶどうの水分が蒸発し糖度が高い貴腐ぶどうとなります。この貴腐ぶどうのみで造られたワインこそがソーテルヌワインです。オーガニックのソーテルヌワインだけを造っていくことに決め、フェルボス家（*1）が所有していた1994年からのオーガニック畑を2013年に引き継ぎました。天候により貴腐ぶどうが収穫できず造れない年もあるソーテルヌワインを、しっかりとオーガニックで造る希少な生産者です。（*1） 以前のソーテルヌワイン生産者
