In order to make the most of the flavor of grapes from vines over 80 years old in the Nuits region in the north of the Cote d'Or, no barrels are used at all, and the soft and delicate flavor of this vineyard is expressed. The producer, Arnaud, cares very much for this vineyard, and has negotiated directly with the winemaker of the non-organic vineyard next door to take care of the vineyard, and is now so enthusiastic that he has made the neighboring vineyard organic as well. This organic wine is perfect for special occasions such as anniversaries.

味わい

私はカーヴで、ニュイ サン ジョルジュ ル クロ デ ザルジリエール （84年にもなるすごい古木です）を見つけました。このワインについてご説明しましょう。

色はしっかりとしたルビー、すばらしく澄み切って輝いている。香りは、樽の香りに、香ばしさとスパイシーさが加わり、心地よい強さ。口に含むと、たっぷりと豊満で、甘美、最後には複雑なミネラルが感じられる。（腐葉土や、森の下草、ジビエのニュアンス）

若さははっきりと主張しているが快いワイン、心地よく長く続く余韻とともに、とてもバランスがよい。今飲んでも良いが、まだ5、6年あるいはそれ以上待てるワインだ。この土地のグランヴァンで、それに匹敵する素晴らしい料理やおいしいキノコ料理をひきたてる。

オーガニック歴：1999年から

ブルゴーニュ地方・コートドニュイの南寄りのニュイサンジョルジュ村にあります。1920年にシャトーを購入し、親から子へと引き継がれてきたワイン農家です。現在は5代目アルノーが中心となりぶどう栽培と醸造を行っています。一部の畑は昔からオーガニックでしたが2012年に全ての畑を転換しました。大地を汚染することにつながらない方法で栽培を行っている土地、体に良いものを飲んで食べるということを子供達に伝えていけることが誇りになっています。ペルチエ家のワインのほとんどはフランス個人顧客向けであり、フランス国内でも入手困難なワインです。区画ごとに厳密に分けて醸造することで、大切にしているテロワール（土壌）を引き出しています。

まさに上質な料理と一緒にいただくワインです。
