"Non-Dosage" in Champagne is gaining attention. "Dosage" means "no added sugar" and is usually added when pouring champagne, to replenish any lost sugar and to refine the flavor. It also has the added meaning of "starting a new chapter." "Non-Dosage" refers to champagne that does not have any added sugar, such as "liqueur." Although no sugar is added, the grapes from Briard, located in a prime location in the village of Auville, where Champagne originated, are of high quality, and after a further seven years of aging, they have a full-bodied flavor and a rich range of flavors.

The yeasty aroma that is characteristic of champagne has aromas of pear and honey, plus a fragrant flavor from barrel aging.

About the Briard family

Organic history: Since 1970

Located in the village of Auviller, known as the "cradle of Champagne." This small-scale producer, which does everything from grape cultivation to brewing and bottling, was able to acquire a vineyard in an excellent location on a southern slope in the 19th century. Because it is located in a region with a vineyard, it is influenced by both the Atlantic and continental climates. The temperature is low all year round and the hours of sunshine are short, but this creates the delicateness that is unique to Champagne. In 1970, when it was said that organic winemaking was impossible in the New Region, the previous head of the Briard family decided to make an organic change. As he says, the soil in the vineyards is soft and produces high-quality grapes. Although grape juice is allowed to be pressed up to the second pressing, they only use the juice from the first pressing, and continue to uphold the traditions of the Wine Moto Briard family.
