A heavy red wine made in the Roussillon region of southern France, close to Spain. The taste brings out the charm of Syrah grown in fields where brown mosaic-like rocks have settled. The dense and complex aroma is a mixture of stewed black cherries, dried figs, spices such as black pepper and nutmeg, and a slightly wild aroma like coffee, chilocollate, and animal meat. It has a supple and powerful concentrated fruitiness, elegant acidity, and deep richness, making it a satisfying drink. This organic wine is hand-built with all our heart.

Taste

A deep, shiny ruby ​​with a purple hue.

The aroma is a little wild, like stewed black cherries, dried figs, black pepper, nutmeg, star anise, and various spices, coffee, roasted and smoked aromas, violet flowers, chocolate, and animal meat. It is a very dense and complex aroma that seems to be deeply inhaled.

The mouthfeel is supple, yet powerful, with a rich, concentrated fruit flavor that spreads throughout the mouth. The elegant acidity continues from the back, and the strong structure and deep richness make it a satisfying drink. The aftertaste lingers forever.

This top-quality cuvée is produced from a vineyard that Severine, a winemaker who has dedicated her life to Syrah, is deeply in love with.

About the Boullier family

Chateau de l'Ou (Boullier family)

Organic history: Since 1998

It is located in the Roussillon region near the Spanish border. It is a vineyard with a very long history, having been excavated and created by the Knights Templar. It was purchased in 1998 and the first wine was made in 1999. The climate is Mediterranean, with frost rarely falling in winter and hot summers, which allows grapes with high sugar content to grow. In order to leave healthy land for their children, they have been practicing organic farming since purchasing the vineyard. The winemaking is led by his wife, Severine, who is described as a perfectionist for her uncompromising attitude in all aspects of cultivation, harvesting, and brewing. The Boullier family's wines are characterized by their elegance, which combines strength and suppleness. The name of the chateau, "l'Ou," means egg in Catalan, and comes from the fact that the reservoir (horse watering hole) on the premises was egg-shaped.
