    Offida is one of the most beautiful villages in Italy, located in the Marche region of central Italy. For generations, the Capriotti family has been producing their own wine from organic grapes here.

    Paolo grew up on a grape-growing family and was fascinated by the idea of ​​using traditional local grape varieties to create unique and distinctive wines, which sparked his interest in winemaking from an early age.

    Paolo, who had been exposed to wine at the restaurant where he worked during his student days and later worked at a wine shop, decided to start full-scale winemaking in his hometown. When he established the winery in 2005, he was only able to produce around 10,000 bottles of wine, but now he is able to produce 60,000 bottles.

    Paolo continues to live and work in his hometown, which is rich in culture and culinary traditions, with his family and parents.

    Paolo believes that for small wine farms like the Capriotti family, who do everything from growing the grapes to making the wine themselves, organic grape growing is essential, because the quality of the grapes they grow is directly reflected in the taste of the wine.

    Paolo's wines have won major awards from Gambero Rosso, Italy's best-selling food and wine guide, Slowine, and the Italian Sommelier Association, and he feels a sense of fulfillment and pride in being able to make his own wines that take advantage of the unique characteristics of the land and climate of his beloved local region, Southern Marche.

    The village of Offida, where the vineyards are located, enjoys a central Italian climate that is mild and warm, yet still has the summer heat necessary for grape cultivation.

    The winds that blow down from the Apennine Mountains to the Adriatic Sea provide excellent ventilation, and the favorable climate here allows the grapes to grow with a rich fragrance, reflecting the characteristics of their varieties.

    The gently rolling hills have dense clay soil, the moisture-retentive qualities of which are ideal for Sangiovese, the main variety cultivated by Paolo.

    The vineyard, which maintains a good balance between native flora and fauna including artichokes, is about 6 hectares in size. Because the fields are located on the north, south, east and west slopes of a scenic mountain area, they are able to monitor the growth of the grapes, which changes depending on the weather each year, and use that information in winemaking.

    Characteristics of brewing method

    Paolo aims to create wines that are fresh and balanced while reflecting the characteristics of the land.

    I want to create wines that are well-balanced in the mouth, with harmonious aromas and flavors that are not disjointed, and that can be enjoyed at any time.

    At the brewery, the wines are brewed separately by variety, harvest year, and field, and then further aged in barrels of different types, including new and old, or barrels with different toasting levels, before being blended to create the ideal flavor.
