This dry champagne is made from grapes grown in a field overlooking the monastery where Dom Pérignon, the creator of champagne, worked, in the prime location of Auvilles, also known as the "cradle of champagne." Made with 100% Chardonnay from a special year, it has a strong mineral aroma with caramel, nuts, honey, and a firm acidity. The taste is also wonderful, combining complexity and delicacy. This is an organic champagne with a high-quality taste.

味わい

キャラメルやナッツにハチミツ、リンゴ、柑橘系の果物のなかに、焼けた石のような強いミネラル感を感じる香り。

口に含むと、泡は大変クリーミーできめ細かい。強い酸味とそれに負けないくらい深くて濃厚な味わい。しっかりとした構造の中に、複雑さと繊細さを合わせ持った素晴らしい仕上がり。後味にまでナッツのフレーバーを感じ、余韻は非常に長いのが特徴です。

毎年は造られず、ここぞという年のシャルドネ品種のみを使用しているため生産本数も大変に少ない特別に贅沢な1本。

オーガニック歴：1970年から

「シャンパーニュのゆりかご」と呼ばれるオヴィレ村にあります。ぶどう栽培から醸造・瓶詰めまで行う小規模生産者で、19世紀に南斜面の一等地、抜群の立地の畑を入手しました。フランスの北に位置しているため大西洋気候と大陸性気候の両方の影響を受けています。気温は1年を通じて低く日照時間も短めですが、これによりシャンパーニュならではの繊細さが生まれます。シャンパーニュ地方ではオーガニックでのワイン造りは無理と言われていた1970年、ブリアール家前当主がオーガニック転換を決意しました。土に対する仕事が圧倒的に多いと語る通り、畑の土はふかふかで良質なぶどうが収穫されます。ぶどうの搾汁は2番搾りまで認められていますが1番搾りの果汁しか使わないなど、ワイン造りもブリアール家に伝わる伝統を守り続けています。
