Organic history: Since the 1990s
It is located on a hill 480m above sea level in the center of Sicily, Italy. It is a family-run winery centered around Carolina and Francesco. The two fell in love with wine and tried making wine experimentally with grapes that their father had grown for a major winery. The results were excellent, so the siblings established a winemaking system. Their father, Salvador, started organic farming more than 20 years ago, when consumers and major wineries had not yet paid any attention to it. Francesco, the son, took over the business quite naturally. They believe that organic is not only good for the environment, but also has to be of good quality. All the harvest is hand-picked, and grapes from different plots are brewed separately, and the type of wine to be made is decided based on the quality of each tank.
