マヴィで働くMINORIさんが長野県塩尻で手掛けた白ワイン。有機認証は取得していませんが、化学肥料や農薬を使用していないぶどうから造られています。
瑞々しい果実味が楽しめる、夏にぴったりな味わいの白ワインです。

ワインの味わい
桃やトロピカルフルーツを思わせる香りに、紅茶のような繊細なニュアンスが重なる、みずみずしく爽やかな白ワイン。おだやかな印象だが、酸もしっかりと感じられ、輪郭のある味わいに仕上がっている。フレッシュさと軽快さが楽しめるスタイル。
乾杯やアペリティフとして、またワイン単体でも楽しめる。野菜のエチュベやさっぱりとした料理との相性が良く、料理の邪魔をしない、日常的な食卓に寄り添う一本。
ワインができるまで
- セパージュは6品種（アルバリーニョ、ケルナー、シャルドネ、ピノグリ、ピノブラン、ソーヴィニヨン・ブラン）。
- 9月15日に全品種を一斉収穫。
- 翌日にプレスを行い、さらにその翌日にデブルバージュ（澱引き）を実施。
- ステンレスタンクにて約1ヶ月かけて発酵。
- 発酵後は古樽に移動。
- 古樽内で約4ヶ月間の熟成を実施。樽の香り付けではなく、落ち着かせる目的で使用。
- 翌年2月末に瓶詰め。

マヴィで働くMINORIさんが長野県塩尻市に移住し、2019年よりぶどう栽培を開始。ワインのリリースは今年で3年目。化学肥料や農薬を使わないぶどう栽培を行う。
