When you put it in your mouth, you first feel a long-lasting acidity, and the presence of tannins from long aging gradually increases. The strength of the body is medium to large.

The long contact between the skin and seeds and the juice gives it a spicy taste of star anise and cinnamon. The aftertaste is bitter like matcha.

Organic history: Since 1980

It is located in a quiet and beautiful natural area not far from the capital Vienna. The son Martin is in charge of everything from cultivation to brewing. His father Hans has been practicing organic farming since the 1980s, when there was no understanding of organic farming, and says, "If there are people who say they can't grow organically, they should try it, even if only partially. Everyone knows that we don't need herbicides. I don't need them just because it's convenient." They aim to make the purest wine possible without adding any yeast, enzymes, or nutrients. The only thing the Diwald family does is adjust the temperature. They aim to make wine that is unique to the land and rooted in the earth.
